Taylor's Soup.

Makes/will fill a 4 quart soup pot.
6 carrots diced.
4 stalks of celery diced.
2 teaspoons of chopped minced garlic.
1 diced onion.
1 package of boneless skinless chicken thighs cut into quartered pieces.
1 liter or quart of chicken stock.
1 large diced eggplant.
1 small can or 4 tablespoonfuls of tomato paste.
1 tablespoon of onion powder, paprika, cumin, fennel seeds, and celery salt, black pepper.
3 bay leaves.
1 chopped jalepeno pepper.
3 cups of red lentils.
2 quarts of water.
