Triple-Good Pork Shoulder

In a small pan over low heat, cook about 1/4-1/2 cup chopped yellow onion in olive oil until tender. Don't use much oil, maybe a teaspoon and don't get the onions brown.

Now put in the pork shoulder, about 3/4 inch thick, four to eight ounces per person. Trim excess fat but leave a bit. Sear the meat over low heat for a minute or two per side. Salt and/or pepper if desired.

Turn the heat down to very low, as low as it can go on a gas range and still stay safely lit. Pile some of the onions on top of the pork. Add enough lemon wheat beer to cover the pork about 1/3 of the way up, three or four ounces should do it. This is why I said a small pan. :) Cover the pan loosely. Let it simmer for twenty minutes.

While that's doing, get a pan of biscuits ready to go in the oven and clean and chop your veggies for later steaming. Carrots and broccoli are good, or tender sweet green beans.

After 20 minutes, uncover the pork, scrape the onions off, turn it over then pile the onions back on. Let simmer for another 12 minutes or so. Add a sprinkle of cinnamon to the pork-onion layers if you like, or your favorite spice. While this is doing, you can pre-heat the oven for the biscuits.

Twelve minutes done, uncover the pork, scrape the onions off, turn the heat up to low and turn the pork over. Use a little chopped garlic on the top side of the pork, maybe a 1/4 teaspoon for each piece. Put the biscuits in and start the coffee. Cook the pork until the liquid is nearly gone and it's brown on the down side, about four or five minutes, probably. Longer if you used too big of a pan. :)

Scrape the garlic off and turn the pork and brown the other side. The onions should be getting brown, too. Put your veggies in the steamer, use more of the lemon wheat beer instead of water.

Take the pork out of the pan and put it in a container with a loose lid where it can stay warm. Scrape the pan a bit to loosen any very done bits and judge how much grease you have. Add a bit of oil if you need to and make gravy with the porky bits, the onions and the garlic. I like to use low-fat milk in my gravy.

The veggies will be done first, then the biscuits, the coffee and the gravy.

Make your presentation. I like to slice the pork about three slices to the inch and put a bit of the gravy on the pork. A dish of applesauce won't go amiss. Plan on a small scoop of vanilla ice cream for dessert with that second or third cup of coffee. Enjoy.

If you can't find lemon wheat beer, this will work with plain water, ordinary beer, water with a bit of lemon zest or lemon juice in it, or even 7-Up. :)
