Today's frittata made with two eggs, buttermilk, chopped tomato, bacon, onion and cheese and a few crumbs of cornbread. Served with 21-grain toast and marmalade. Delicious!

Erin is a fantastic cook, and I've had a ton of good food since I've gotten here. Multiple types of tacos, homemade chimichangas, and more. 'S been great :)

LOL That was dinner last night! But I must know why Erin teases us so? Frittatas are fairly simple, but I must know: temp and time? Have an extra dozen or two eggs, lots of cheese, etc.; no buttermilk but have heavy cream, so there is that. Also have some baby spinach too, so may add that.
On to other cooking endeavors, looking at a tomato sauce today with San Marzano tomatoes and fresh herbs in the Ninja. Yes, I got the new Ninja Foodi Smart Lid / OneLid OL701 and mom got the Speedi; They are both great. And while she got the DT251 Air Fryer Oven, I still love my Ninja XL Grill Air fryer. It makes the worlds best Chili Cheese Hot Dogs. I really need to figure out how to make a frame to hold a slice of my low carb bread and curl and toast it for the hot dog. Is it a Midwest thing that sliced bread is a hamburger bun and hot dog bun?
Temp and time
Temp is easy; put it in the broiler as hot as it goes. Time is when it begins to brown the cheese on the top. :)
