I would wonder why people like her apply to religiously based schools? Still calling what she did fraud is stretching it. If she had applied as 'male' and showed up looking as she did, how would the school have reacted?
Maybe because...
She's a Christian herself and would prefer to go to a school with zero tolerance for the kind of behavior that's the norm at state universities?
Honestly... If I had the ability to I'd go back to BYU-I in a heart beat. And I'll bet you anything they're even stricter on this stuff than any other religiously backed university.

she describes herself as Catholic so a Baptist school wouldn't share her beliefs (but I suppose most Catholic schools wouldn't be any more tolerant).
Quality of Education
Actually, some religious-supported schools are known to have fields where their education is the best, possibly in the entire country. To have a diploma from one of those schools can make a big difference when trying to find a job. You know having a diploma in finance from Harvard or Yale carries a lot more weight than one from State U, well there are fields where some of the best graduates come from religious institutions of higher learning.
