First off, what century do you define as middle ages?
The time frame is needed to know just how various things were handled, as far as food, social interaction, voyage lengths and destinations, etc.

What aspect are you asking about, food, boredom, fear of the unknown,technical details of sailing large ships with crude rigging? A better defined question will yeild more answers.
