Here's a nice site on font stacks...
This site gives you basic stacks and allows you to pick and choose from fonts often found on various platforms:

As it happens, Arial is pretty good, but not universal, and Macs and PCs, but falls down badly on Linux machines.
The font with the *most* likelihood of being available across every platform is Courier, but few of us would choose it for looks.
