Green eggs and ham. I use a powdered substitute made from mushrooms so I can dye the yolks dark green the white light green learned how to make both fried and poached. Hollandaise sauce is dyed green too the ham has been injection cured with green also as in Dr. Suess as a kid we had dyed scrambled eggs only for green eggs and ham. Dyeing hard cooked eggs takes place tonight, have already made the treats for the kids baskets, The late after noon meal will be duck both roasted and smoked. With various pies and homemade ice cream for dessert. We celebrate the coming of spring and family most of which will be at my plsce for the weekend. Enjoy your holidays as you see fit.
