I found this a while ago and have tried it a couple of times and each time, it gets better. I thought I would share it with you all.
Ingredients:
1 large onion (Walla Walla Sweet, Vidalia are best), chopped
1 tbsp. sweet Hungarian paprika
Salt to taste
1-1 1/2 cups water
1 tbsp. all-purpose flour
1/4 cup olive oil
2-3 lbs. boneless chicken breasts
1/2 tsp. ground white pepper
1 cup sour cream
Directions:
In a medium sauce pan, saute onion in hot oil until tender, but do not brown. Add paprika and stir to coat onions, again do not allow to brown or burn.
Add chicken, salt, pepper and water. Cover and cook over medium heat for one hour, or until meat is tender.
Remove chicken with slotted spoon. Set aside and keep warm. Add flour to sour cream and blend well. Add to liquid in sauce pan. Stir over low heat until smooth and mixture thickens (be careful not to boil or mixture will curdle).
Return chicken to sauce and cook over low heat until flavors incorporate.
Serve over cooked noodle or dumplings.
One thing I found that sort of works really good is when the chicken is added back to the sauce is to break up the breasts into smaller pieces. Instead of having larger pieces that you have to sort of dig for, you have it spread out in the sauce in smaller bite sized pieces and is spread out through the sauce. The taste is incredible and I will guarantee that there won't be any left-overs.
Good luck and good eating.

I shall be sure to try it
Thanks
I'm not bad. I'm just drawn that way.
Chicken!
I'll definitely try this! I recently bought a whole lot of boneless chicken breasts, cause they were on sale, and I froze 'em.
I need chicken breast recipes!
Thanks!

Chicken Paprikash--lower fat/diabetic version
My sister developed a version for our diabetic elders about 10 years ago that seems to have less carbs overall, but not much.
Lower Fat./ Diabetic Version of Chicken Paprikash
List
Chicken Breasts cut into bite size pieces, or other chicken pieces cut up.
Sweet Onion, amount depending on number of servings
Canned Mushrooms (to preference)
Paprika
Sour Cream, amount determined by number of servings
Cornstarch
Cut Chicken breasts into bite size chunks
Place in skillet with water and simmer until the chicken is cooked through
Add chopped onion and mushrooms, additional water if needed, and lightly salt and pepper
Remove chicken from sauce and allow to cool slightly,, and place on flat cookie sheet
Cover with paprika, both sides,
Return chicken to pan, add water if needed and bring to a boil on about medium heat until chicken reaches desired state of tenderness.
Turn to simmer
Temper sour cream with sauce from pan and mix well
Add to pan
Mix more of sauce with the sour cream with cornstarch
Return to pan and bring up heat to thicken as in gravy
When it reaches desired thickness, turn to warm and serve
We usually eat it over medium sized split baked potatoes., noodles, or whole wheat pasta..
A fast version, 2-4 people
Cook cut up pieces of chicken breast in water, with onions,
add good coat of paprika
Add canned mushrooms (we like mushrooms)
add Mushroom soup with some water and simmer, allow to thicken.
Serve that over baked potato or noodles
