I made some shredded beef today and it's so good, it's just amazing.
So tender it melts in your mouth. :)

Here's my recipe:

1 lb stew beef cut in 1 inch x 1-1/2 inch chunks.
1 small onion chopped
1/2 tbsp cooking oil
3 oz red wine, fruit juice, beer or soda (I used root beer this time)
3 oz chunky salsa
1 oz hot sauce
1 oz chopped garlic
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp cinnamon, ginger or chili powder (I used cinnamon tonight)
1 tsp black pepper
1/2 tsp salt (I go easy on salt, you might like more, or use more soy sauce)

Really good to add: 2 oz chopped parsley or cilantro (I didn't have any today)

Brown onion and beef in oil over medium high heat in skillet, turn heat to low and add other ingredients. Cover and simmer for 4 to 6 hours, stirring about once every 45 minutes or so. After 4 hours, start testing meat with a wooden fork, when you can tear the meat apart with the flat of the fork, just with pressure, it's pretty much done.

Leave the cover off, turn the heat up to medium and reduce the liquid so meat is still moist but there is no runny liquid. While doing this, continue using the wooden fork to tear the meat apart. You should only need to press and pull sideways with the back of the fork to do this.

The shredded beef can be used in tacos, enchiladas, burritos or mixed with scrambled eggs for breakfast. It's easy to freeze and re-heat in microwave.

I ate a share tonight with fresh chopped onion, lettuce, cheese and red sauce in corn meal tortillas. Enjoy. :)

Erin, It looks delicious, but for me it is a big tease because now that i have diabetes and trying to lose weight all things niece are of limits:(

I'm a diabetic too, and all my Doctors have told me that I can eat pretty much any kind of food I like-it's the portion control I need to be careful of! Check with your Endocrinologist or your Family Doctor. They can really help you get your blood sugar under control.

I'm hoping to convince my wife that I can handle some Pumpkin pie on Thursday-and I'm also going to make some low sugar cranberries. I like Turkey Day-I won't let Diabetes mess it up!

I'm diabetic, too, and have to watch my portions ...

... especially since, 10+ weeks after surgery, I am beginning to put on weight with a vengeance. I've put on 7 pounds in the last 2 weeks, halfway back up to my original target weight. I've cut back from the 70 meals a day, to 4, the past couple of days.

But this looks good, and edible, and I'll just have to watch how much I eat.
As for Turkey day, my doctors have told me not to overdo it, ( I won't, because when I eat too much, it can cause maybe 10 minutes of almost excruciating pain an hour od so later, But if I watch the portions, and since I'm on insulin, correctly estimate the amount of insulin to take, nothing is off limits once in a while

Strangely, Erin, about 4 hours before this was posted, I just bought some Worcestershire sauce, which has been missing form my cupboard for over 6 months. I will have to go buy the beef, and some salsa, though. I'm not complaining, though. I need the latter for Turkey day, anyways. And a Turkey is too much, anyway since it would be just for me.
